Ryougi shiki also uses a knife
there's a Ryoko Asakura with a knife
NGBC Marco can take out his knife and attack with it
most girls from samurai shodown use knives (or short swords)

There's also knives used as projectiles, although it's pretty much restricted to DIO, Shadow DIO, and Sakuya Izayoi.
