You can't really think of very many chars in fighting games that came from Canada or Australia.... Off top of my head:

Canada: Rip Saber from Slam Masters

Australia: Big Bear/Rayden from Fatal Fury series, Craig Marduk or Roger Jr. from Tekken, and Jeffry McWild from Virtua Fighter....

Other than that I can't think of anyone....

Oh yeah I forgot about Sasquatch.... I don't play Darkstalkers much, there are a few decent chars in there but many of them are just too cartooney for me.... I want a more vicious looking sasquatch.

Australia: Craig Marduk
NO.  Craig Marduk is American, Australia doesn't want him, America can keep him, and I'll continue to live in denial as long as I have to.  On a far reaching technicality Jin Kazama is Australian, though; our immigration laws mean the two years he spent in Brisbane unlearning Mishima karate would've required at least dual citizenship.

Other Australians include Zabel Zarock / Lord Raptor from Darkstalkers, and Zappa from Guilty Gear.

Craig Marduk is a rapist o_O

If you play through Tekken with Nina or Anna, he tries to rape them (if he wins the fight then he successfully throws the woman over his shoulder and takes her off to have his way with her)..

Anyways I was getting off topic lol.

I'm not sure if WakuWaku 7 counts, since its setting is just "throw any fantasy gimmick you can fit in it", so countries don't matter, but Dandy J can certainly pass for an australian stereotype.

I think they made Kung Lao Australian after the MK movie IIRC.

Nooo
That's what made Darkstalkers so appealing.
The intentionally cartoonish designs were sort of a self parody of popular monsters from horror/monster movies.

Australian characters are rare in fighting games, and when they do appear they're always fashioned after some other stereotype.  Why?  Because the stereotypical Australian would dominate everyone.

This is the typical Australian.  He fights lions in his spare time from running his own multi-million dollar empire, when he's not killing hippies or his own competition.  He would kick Gouki's ass, then tie it around a gum tree for use as a kangaroo latrine.  It's been said that eight out of ten SNK bosses can trace their lineages back to the early tribes of the savage Australian wild.
