Is it possible to have two separate elements shown at the same time during the win screen?? I want to overlay the "%'s Wins" over an animation. I'm thinking something along the lines of how Lifebar animations work with text layouts through layer ordering.

Is this a possibility??

Not really. The personalised name is based on a font. Whenever you do an animation it's always a generic "You Win" I am quite sure you cannot meld the 2 via the fight.def. No win1.anim win2.anim etc.
