I sat through a demo presentation of Project Beast/Bloodborne.

Setting for Demo: The city is a famous place of medicine, where infected humans go in number to cure their diseases. However, in this part of town, Beast Hunts were active. Large groups of humans track down beasts and burn them at the stake. In this demo, the player is a Mercenary Hunter and moved through streets to avoid the bigger crowds. All along, killing some humans that attacked you.

Common Threats: Infected Dogs, either wild or domesticated, exist on the streets. Aside from being fast attackers, their barks can draw attention from humans in the area.
Mini-Boss: a large, humpback man with a large brick in his hand, he was slow but powerful with that item.
Choices: Two large dog monsters and another mercenary hunter were fighting in front of you. You can (1) choose to kill the beasts and have that npc aid you in a boss room. (2)  Kill the hunter and steal their items. (3) Simply avoid them and continue.
Boss: Large, Horned and Howling monster with his body (with exception of his chest and one arm) covered in fur.  The fight was on a bridge and his main attack was slamming down his one large claw on the player.

Melee Weapon(Forgot name): a quick attacking blunt weapon that swings like a 1h sword from Dark Souls 1. Can be extended to a blade weapon before or comboed into a melee attack from the first form. Ending an attack with this in its second form has a longer recovery time, hurting dodging as an option.

Blunderbuss: Medium range gun weapon. Can be used in succession with no reloading animation (ATM) but does have a recoil animation. Seemed more useful as a way to end a combo to have dodging options. If a shot is hit at a precise range, enemies will be in a stumble animation and can be "finished off" similar to punishing a shield break (Also a Dark Souls Reference)

Healing: The item to heal with was not actually shown. However, the healing animation was similar to a faster version of breaking a soul gem in Dark Souls 2, The healing FX is a Red and Black Glow that fades quickly.

Also, the demonstrator added that this game does not take place in any universe previously in any other game. This is completely on it's own and unrelated to any other series. So, I guess "From Software" is now a style.

Edit: I'd like to add that when you killed enemies you received "Something" from them. The animation for receiving whatever it is are the soul receiving effects from Demons' Souls.

This IGN video says that the frustrating tail sequences and instant failstates which accompany them and that have plagued the series, especially in the last two games, are being modified. The ways they're being changed are a little vague - there's mention of alternate means of getting the same information - but I don't care what it is so long as I never have to enter another "magical glowing realm of whispers" ever again.
