It's a guilty pleasure, but RPG Maker for psx.

Sadly, I'll never play it again because I (in a great lapse of judgement long ago) wiped and sold the memory card with all of the created games on it.  I made some incredibly good old-school-style RPGs too (one even with it's own unique currency system).  I'd kill to play them again... DAMMIT.
