I know that when you install iTunes, Quicktime gets automatically installed along with it. My question is: do you NEED Quicktime for iTunes to work correctly, because I never really use Quicktime, it just starts up on boot...

iTunes needs quicktime for only ogg vorbis support and some minor codecs.

doesn't itunes play everything using quicktime?

anyways, you can remove the tray icon, right click / settings / advanced or something :)
