Weapon-based, staff only - Soul Calibur already has Kilik though and I don't see a new Samurai Shodown or Last Blade coming out anytime soon.

There's already plenty of badass Thai users of Muay Thai in games - I'm surprised, however, that we're yet to see a reference to Parinya Charoenphol, who manages to stand out from that particular character archtype.

Eagle is the closest, even kilik is more based on the asian techs, it was also used a lot by the sailors, so its unsure what parts of it permeated, or not, with or from the asian culture.
