I'm not familiar with Hunter X Hunter, so some of the other characters are new to me. I do recognize Gon, Killua and the guy with the Joker card. But that's it.

Also got to wonder... will it be like Dragon Ball FighterZ?

It's being published by Bushiroad who gives their developers pocket change to work with so this is about on par for what I expected.

I don't really care about graphics though so I'm reserving judgement for when they show actual gameplay. I'm a big fan of Eighting's games so hopefully they pull through.

They did actually. Skullgirls got one last Evo back in 2022 with SonicFox taking it.
It sadly didnt managed to reached that many entrants not even 300. Since a bunch of new games have came out since its pretty hard to put it back as a main event.

The lack of any Vs./Tag style games is a bit odd, but understandable, but it keeps the speculation gears in my heart turning and oiled up. DBFZ is being phased out in favor of a new BT game (Sparking Zero), whilst Skullgirls has been in a heap of controversy due to the new ownership that has a more, erm… family friendly vision of the IP, much to the chagrin of some out there. I’m started to speculate Capcom has something new up their sleeve to fill the gap, or quite possibly Project L is building up steam. A lack of platform fighters is also odd; NASB2, RoA, or even Ultimate are not present. Also, remember when EVO had old legacy games like ST, Melee, etc? Nowadays we only get one, if that.

I am aware of that being a factor. But there being no platform fighters at all is odd. So I think Capcom might have an answer about the lack of Tag and/or platform fighters at EVO up their sleeve soon with SF6 doing so well in sales. A CvS new entry (probably not a “3” per se) that strays away from the classic formula (grounded team game, multiple styles) would be controversial but plausible, but I think a purely Mega Man fighter is possible too given the leaks and would be less controversial than a CvS reboot.

Arena fighters, in any form (PS-likes/3D platform fighters, anime arena games, or realistic arena games) have rarely been competitive ever though. Have they ever been big enough for EVO, for example? Regardless, the Capcom leak revealed a “Power Stone Remake”.
