It's somewhat possible. If you need some example (only one I can think of), check out the_none's Giygas (life counter of its own).

One of my Mega Man 8-bit characters does this, and displays its 8-bit vertical lifebar instead.

Code:
[Statedef -2]

[State -2, AssertSpecial]
type = AssertSpecial
trigger1 = 1
ignorehitpause = 1
flag = NoBarDisplay

"You must defeat my flaming
dragon punch to stand a chance."

^ If you do that, you better code a lifebar for the opponent as well!  Plus power meters?

It is to my understanding this disables all screenpack lifebars/meters

As far as I know, it disables everything, even the timer.

Not possible to disable your lifebar and the lifebar only. NoBarDisplay removes everything leaving just the stage and the characters.
There's no way around that.
Coding a custom lifebar is possible and you could just display it on top of your screenpacks lifebar. Probably not ideal, but possible.
