These 2 Requests were a little tougher than i expected for numerous reasons. But they worked out in the end  ;)

Just wanna say that these are really well done. I've converted a shit ton of stages myself but struggled with SF2 stages. Thank you for these. Also could you point me to Guy's stage online? I haven't been able to find a conversion.

wouldnt be harder at all from what im seeing in the files right now, I just didnt know of this version but honestly im not sure which version is better lol but either way I will consider this a stage request and add the zoom effect to it for you when i get a chance if you'd want it. It wouldnt be a big deal.

Alright I changed it up a bit. Related question, but when it comes to different Mugen versions, do people prefer to download one file meant precisely for the version they have, or an archive that includes several def files from which they choose the one they need?

Most stage creators upload one zip file with all Def included and the user can choose his/her pick. I recommend this too.

On another note, wouldn't you have to remake all your stages to support 1.1 zoom as the rips you currently have aren't tall enough to zoom out on?

Faced this with the AI but when he breaks and counters with a crouching heavy kick the sprite disappears.

Check out this Dante released by a good friend of mine. It comes with all the bells and whistles.
Base sprites by Bugya but a lot of custom sprites were designed by him (especially weapons) to make the character more complete.

The problem is this stage can't be zoomed out beyond 1.0 cuz the sky sprite cuts off. Would have to resize it or replace it with a new sky sprite.

I faced the same problem then I reduced boundaries and zoom value. then the problem is gone. Is it still happening in 1.1? I don't use mugen 1.0 anymore.
There is no zoom in 1.0. It happens cuz I edited this stage too but the sky sprite isn't big enough so the only way is too keep zoom  values at zoom in = 1.1/1.2 etc and zoom out at 1.0 max. Anything less will show the top sprite cut off.

Weirdly, his Hadouken gets stuck in the wall of some stages with zoom, although it only happened in a stage that is a fusion of Jack's AOF1 and AOF2 stages.

Sounds like a stage bounds problem and not a character flaw.
