Is it possible for me to choose and fight a computer in VS Mode?

Choose the fighters in watch mode, then enable user input in player 1.

I would show you the buttons, but I'm not on my computer right now.

Ctrl-1 toggles player 1

and you have to do it when it says round 1

you can do it anytime, but I rather do it during the intro.

What I also found is if you do it while the AI has the player in a crouch state, you 6 times out of 10 get suck in the crouch state.

also make sure u have your debug keys turned on in the mugen.cfg file
