can someone tell me what does e stand for in iori's movelist?

That would be impossible. We dont know which Mugen Iori version you're talking about.
Post the problem text here so we can read it. We can only figure out the answer if we see the lines of code.

E for evade.  Usually the C or Z button.  A=LP, B=LK, C=HP, D=HK, AC=Body Blow

E should be a single button press. You decide what buttons on your keyboard to use. The 6 attack buttons are up to you.
AC would just be the two keyboard buttons pressed at the same time. It isn't hard to do. But it's not as easy as pressing only 1 button.

My Player1 buttons are mapped to
L ; '
, . /
My AC would make me need to press
L+'


Depending on the keyboard, simultaneous key presses causes a bug. All of the keys wont register as being pressed.
